I am a dance instructor, specializing in teaching engaged couples how to dance, so their first dance as a married couple at their reception is smooth, graceful, and elegant. Most of the time only the engaged couple learns to dance, but I have often worked with one or both sets of parents of the engaged couple, or the wedding party, and even gone to the receptions and instructed the guests, so they know better what to do once the dancing starts. I instruct several different styles of dance in each of the categories of Ballroom, Swing, Latin, and Country. The learning process works most smoothly when there is enough time to take lessons to learn the moves, plus enough time between lessons to get smooth at performing them, and still be mostly done with the learning process before preparations shift into high gear in the final month. This means, ideally, that lessons should start four or five months ahead of the wedding date. Of course, if you want to learn multiple styles of dance, or if you are concerned that you have "the world's worst rhythm" (something DancerGuy hears a lot), more time should be allotted. If you don't have that much time left, it can still be done, but it just means that you will have to be more diligent during the learning process.
